Apple Cranberry Jammers ~ #CreativeCookieExchange

Our theme this month is Thanksgiving Table Cookies.  I came across this recipe and though it seemed like the perfect cookie to share as it is a little bigger than your average cookie.  It is almost like a cookie-pie. Thanksgiving is my favorite holiday, and it means a lot to me to be able to show my love for my family by making all of their Thanksgiving favorites.  Is it exhausting, why yes it is....but I would not have it any other way. I love that there are no gifts involved in this particular holiday, no looking for that perfect thing to give, only the gift of sharing each others company.




These would be the perfect last minute dessert - a little something extra for the dessert table.  They are super easy to put together, and to make them even easier I used canned apple pie and whole berry cranberry sauce for the filling.  The would also be a great way to use up that left over cranberry sauce from your Thanksgiving meal.

Apple Cranberry Jammers

Ingredients
  • 150g (1 cup) brown sugar, lightly packed
  • 100g (½ cup) granulated sugar
  • 225g (2 sticks) butter, softened
  • 2 eggs
  • 5ml (1 teaspoon) vanilla extract
  • 240g (1½ cups) all-purpose flour
  • 160g (1¾ cups) rolled oats
  • 4g (1 teaspoon) baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 490g (2 cups) apple pie filling, roughly chopped
  • 140g (½ cup) whole berry cranberry sauce
  • Powdered sugar for dusting
Preparation
  1. Add apple pie filling and cranberry sauce to a bowl, mixing until well combined; set aside
  2. Preheat oven to 180℃ (350℉).
  3. In the bowl of a stand mixer with the beater blade attached, combine butter, sugar and brown sugar.
  4. Beat until light and fluffy, about 5 minutes.
  5. Add eggs and vanilla and mix until evenly combined.
  6. Add flour, oats, baking powder, cinnamon and salt and stir until just combined.
  7. Spray two regular sized muffin tins with cooking spray.
  8. Using a medium ice cream scoop, scoop dough into muffin tins, press down with a spoon to create cups.
  9. Bake for 15-20 minutes until the cookie cups are golden brown and set. 
  10. Remove cookies from the oven, and while they are still warm, make the cups by spraying the bottom of a small shot glass with cooking spray and press the shot glass down into the center of each cookie to create cups.
  11. Let cool in pan for 15 minutes, then transfer to wire cooling racks.
  12. Spoon the apple and cranberry filling into the cups, and dust with powdered sugar.
